Wild Blueberry Buttermilk Pancakes

Weekend mornings done the Maine way. Adding the berries after pouring keeps them from bleeding into the batter and gives you a better burst of flavor in every bite.

  1. Whisk dry ingredients together in a bowl.
  2. In a second bowl, whisk buttermilk, egg, and butter.
  3. Fold wet into dry until just combined. Batter should be slightly lumpy.
  4. Heat a griddle or skillet over medium heat, lightly buttered.
  5. Pour ¼ cup batter per pancake. Scatter blueberries directly onto each pancake before flipping.
  6. Cook until bubbles form and edges look set, then flip. Cook 1–2 minutes more.
